Yeast Utilized: 1 1/8 teaspoon
So, did you notice the foreshadowing in the previous post?

That’s right: Potato Bread! Let’s do this.
Problem is, I said “let’s do this” at, like, 6 p.m. Bad call, but whatever. Let’s still do this.
This week’s produce delivery brought potatoes. Many potatoes. I ate many potatoes (about which I will never complain), and this seemed a good opportunity to try a new loaf. So I made some mashed potatoes to be an ingredient. Made for a respectable dough, so I think I did everything…right?

There is no way I’ll be able to tell all these dough balls apart in my camera roll.
Got a good rise, too, so I clearly let my mashed potatoes sufficiently cool. Go me!

Ah, smooth. Beautiful.
Now, the recipe calls for you to punch the dough and then fold in. That felt a little aggressive, and I probably did more of a smuuuush. So, I smushed it and then formed it for my loaf. I tried to do a design or shape in this just with my finger. Tried to do a smiley face.

I didn’t commit. I “pulled my punches.” Haaaaa! Hahahaha! I’m hilarious.
So, in its loaf shape, I left it to rise a bit more. …but it was now 9 p.m. Agggh. I let it rise for the recommended hour, and probably really should have let it rise a bit longer, but now it was 10 p.m. Letting it rise overnight was a bad idea, I was sure, so I put it in the oven.
Anyway, it baked well–you know what? Let me take more responsibility for that. I baked it well. I did a good job!

Maybe a touch dark at one end there, but not bad. And you can almost see the smiley…
The scarfed down the first warm slice at 11 p.m.—marvelous—then I brushed my teeth and went to bed.

Good loaf. I’m proud of you. We did good.
