BAKE 29 – JULY 20, 2020

Yeast Utilized: 1 1/2 tablespoons

I had some sweet potatoes on hand, so I decided to mash the bunch and make some Sweet Potato Rolls. Check out that total time: 12 hours. This is an overnighter.

First things first, soften those potatoes.

Recipe calls for only 1/2 cup, but I’m all in.

I put the yeast in the bowl with warm water and sugar, and let that bloom while I gathered the rest of the ingredients.

Everyone present and accounted for.

There’s no real kneading process for this one, which surprised me (also, bummer: I like kneading). Before the first rise, I just needed to get it all well mixed and ready for the fridge. But what a sad-looking dough.

“I am a deflated soccer ball.”

I covered this with plastic wrap and put it into the fridge.

First thing next morning, I threw my apron on over my pajamas and got to work on the second part of the recipe. And look!

The soccer ball inflated a bit.

Again, no real kneading called for, so I just divided the dough into 24 equal portions (about 1.5 ounces each) and got them ready for their second rise.

Do I confess that I’ve never watched a single episode of Spongebob? I literally just know the memes.

Fully inflated and ready for the oven!

I may have overbaked them a bit (I fear dough interiors), but these made for a nice snack when I took a break from painting my bedroom.

They’re especially nice with sweet butter.
