BAKE 39 – OCTOBER 5, 2020

Yeast utilized: 1 1/2 tablespoons

Penultimate loaf! Believe it or not, I’m nearing the end of this yeast journey. With lots of milk in the fridge, I wanted to give Amish Milk Bread another go. Last time I tried, my power went out and I wasn’t able to bake for several hours.

First, letting the yeast bloom in warm water while I gather the rest of the ingredients.

Then adding everything but the flour.

I didn’t do better with the butter this time. Why? I do not know.

Then, into this very wet start, I add four cups of flour.

That there needs more flour. So more flour it shall have, until I can knead it. And you know, blend in the butter the way I should have. I really love kneading this bread. This is a kneading all-star.

Punched down, kneaded out the bubbles, and separated it into two. Chose a smaller container for my second loaf this time through.

And now ready for the oven. This time, no power outage, so I can stay on schedule! Sorta. I kept having to dart away from a Zoom meeting to check on these and then remove them from the oven.

Success! And I like my little round loaf.

All in all, much more relaxing and pleasant that my first attempt.

Very, very tasty, too.
