The Last Bake – OCT. 16, 2020

Yeast Utilized: 2 teaspoons

Here we are. We’ve reached it. The last bake of the original one pound of yeast. Of course, I have to end as I began, with the Sandwich Bread recipe my niece first made that lead me on this journey.

Ingredients gathered.
Behold, the final teaspoons of the pound.

This is a lovely dough and I thoroughly enjoyed kneading this, just a I did the first time.

Ready for first rise!
First risen!

Aaaah, I just love the feel of this dough. Very nice. Now, form into a loaf for the loaf pan I bought just because I was doing this “project.”

Ready for second rise.
Second risen!

I probably could have given it a bit more time, but into the oven it goes for 35 minutes. And then a bit extra because I wanted it a touch browner.

Beauty.
Still delicious.

This bread is particularly tasty when it’s warm from the oven.

So, this concludes the One Pound of Yeast adventure. The coronavirus is not gone from our lives and I’m still self-isolating. There seems to be no end in sight for that.

In the months since I first purchased one pound of yeast, I’ve acquired lots of new baking tools and skills. This blog contains far fewer Disaster Loaves than I thought I’d make. I’ve enjoyed finding new recipes and trying new ingredients.

Just now my saffron has started to bloom and I hope to soon make some homemade saffron buns.

I feel sad about much in life right now, but baking has helped me find moments of peace. It’s forced me to slow down and acknowledge that, yeah, I do have the time to combine these ingredients and fill my home with hearty food I made myself.

I wondered when I began if one pound of yeast would be long enough to form a habit…

This just arrived the other day. I can’t wait to get started.
